NEW BRAMFORD, Connecticut (CNM) -- Chef Marguerite LaFleur's new cookbook, "The Y2K Gourmet," was intended as a joke. Then it sold 60,000 copies.

The book offers 120 recipes using only shelf-stable ingredients: canned beans, tuna, tomatoes, powdered milk, and a surprising quantity of Spam-style luncheon meat. Highlights include "Pantry Paella" and a dessert called "Millennium Mousse," made with instant pudding and canned pears.
"People have these enormous stockpiles," LaFleur said. "They feel silly. I tell them, 'Don't feel silly. Feel hungry.'"
LaFleur recommends a hand-cranked can opener, a camp stove and "a good attitude." The book's final chapter is titled "If Nothing Happens: 40 Ways to Use Up 200 Cans of Corn."
