Thanksgiving leftovers still a problem, nation admits

BELLWETHER, Iowa (CNM) -- It has been eight days since Thanksgiving, and in kitchens across the country, the turkey remains. A telephone survey by the Bellwether Food Council found that 34 percent of households still had leftover turkey in the refrigerator Thursday.

Food-safety experts recommend eating or freezing leftovers within three or four days. "After a week, please, let it go," said council spokesman Dwight Penrose. "The turkey has given enough."

Popular uses for leftovers include sandwiches, soup, casseroles and something one survey respondent called "turkey surprise," which the respondent declined to describe further.

The council said it would release a similar survey about fruitcake in late January, "if anyone will admit to it."
